Cooking Experiment: Recreating Chuy’s Creamy Jalapeño Dressing

One of the downsides of moving out of the city limits and into the ‘burbs was the loss of being surrounded by restaurants. What was worse was moving from a place with my favorite restaurant within 15 minutes of where I lived – I now live at least 30 or 45 minutes from one of my most favorite restaurants. I have tried for years to recreate the dressing/sauce that keeps me going back time after time, and time after time I have failed… until now! This recipe (which is apparently highly guarded by Chuy’s staff) is the closest I have EVER come to reproducing the (almost) World Famous Creamy Jalapeño. If you pair this with Tia Rosa Megathin Tortilla Chips, you may just think you are at Chuy’s!

Creamy Jalapeño Dressing

20 oz. sour cream
1 packet of Hidden Valley Ranch Dip Mix powder
1/2 cup cilantro leaves
2/3 cup pickled jalapeno slices
1 tomatillo

Step 1: Take the tomatillo, jalapeños and cilantro and pulverize in a food processor.
Step 2: Mix the packet of ranch and sour cream as instructed on the label.
Step 3: Mix the ranch dressing with the tomatillo, jalapeños, and cilantro.Step 4: For the most authentic taste, allow to sit overnight. The first day, it may seem to taste too “ranchy” but after the flavors meld together, it ain’t bad!

    I have found that using 2 tomatillos and some jalapeno juice to thin out the creamy makes the most authentic flavor compared to my taste bud memory.
