Cooking Experiment: Pretzels!

I have never used yeast or made my own dough – so this was an adventure into wonderland for me… turns out, it wasn’t as hard as I thought it would be – and pretty tasty, too!

I hope that as we reflect on 2010 we can recognize the blessings that God has placed in our lives. T and I have much to be thankful for: a new healthy family member (H.R. our youngest nephew), our jobs, our health, a roof over our head, and much, much more. We have been truly blessed. We also have many friends that have new additions to their families – and we hope and pray for these new additions to grow to be strong and healthy.

Our meal last night was absolutely delish! I had intended  to make Barbecue Ribs, Twice Baked Potatoes, and Turnip Greens. The turnip greens were left by the wayside due to an unforeseen cooking experiment (which will not be pictured here today) also known as Beer Cheese Soup. Unfortunately, I needed chicken broth for the turnip greens, and I had previously used my last can of chicken broth for the Beer Cheese Soup earlier yesterday afternoon at the bequest of T. (more…)

Cooking Experiment: Caramel Popcorn

T wasn’t feeling so hot today (probably a little food poisoning yesterday), so I told him I would make him some chicken noodle soup… off I go to my favorite recipe website and I find an excellent recipe for Chicken Noodle Soup. However, as I entered the front page, this recipe for caramel popcorn was staring at me – so I decided to try it out. Man, this is some of THE best caramel popcorn I have had in a while. A word of caution, it is really sweet, and while crunchy at first bite, it will stick to your teeth! But, SOOO worth it! (more…)

Cooking Experiment: Homemade Chicken Pot Pie

I was off on Monday, so that meant it was Jen’s Cooking Night. I perused my favorite recipe website and found a recipe for chicken pot pie with 5 stars and over 3000 ratings ["it must be pretty good", I thought to myself]. So off to the grocery store I went – we aren’t so good at planning for the week in advance, oh well. It was received well by T, who immediately (before tasting) asked for 1/3 of the pie, then finished off the leftovers for lunch and dinner Tuesday. I think that says something, especially since the man will NOT eat leftovers!! It was actually quite tasty and I think it will be made again. T did say that he wanted me to make the chicken enchiladas again… hmmm, I wonder if he liked those, too? (more…)

Cooking Experiment: Recreating Chuy’s Creamy Jalapeño Dressing

One of the downsides of moving out of the city limits and into the ‘burbs was the loss of being surrounded by restaurants. What was worse was moving from a place with my favorite restaurant within 15 minutes of where I lived – I now live at least 30 or 45 minutes from one of my most favorite restaurants. I have tried for years to recreate the dressing/sauce that keeps me going back time after time, and time after time I have failed… until now! This recipe (which is apparently highly guarded by Chuy’s staff) is the closest I have EVER come to reproducing the (almost) World Famous Creamy Jalapeño. If you pair this with Tia Rosa Megathin Tortilla Chips, you may just think you are at Chuy’s! (more…)
