Oh Boy!

It seems like EVERYONE I know is having a baby… ok, that is an exaggeration. I can, however, name off several friends and family members who are expecting though. For one of our friends, I made a card to congratulate them on their expected bundle of joy. I had T write the inside, something to the effect of, “May your child have all the wonderous things life may bestow upon him. Remember to be nice to him, because he will be the one picking your nursing home.” I left it with “…and Jennifer” with the intentions of T signing it before he took it to our friends, but he instead just stuck it in the envelope and handed it to them. It apparently gave  mom-to-be a good giggle for the rest of the evening when he asked her for a pen and signed it right there :-) God Bless T, I love him… lol!

For our other friends who were there that evening… I am working on yours, too. I promise… you may or may not get it before his 18th birthday, but I am working on it!

Cooking Experiment: Homemade Chicken Pot Pie

I was off on Monday, so that meant it was Jen’s Cooking Night. I perused my favorite recipe website and found a recipe for chicken pot pie with 5 stars and over 3000 ratings ["it must be pretty good", I thought to myself]. So off to the grocery store I went – we aren’t so good at planning for the week in advance, oh well. It was received well by T, who immediately (before tasting) asked for 1/3 of the pie, then finished off the leftovers for lunch and dinner Tuesday. I think that says something, especially since the man will NOT eat leftovers!! It was actually quite tasty and I think it will be made again. T did say that he wanted me to make the chicken enchiladas again… hmmm, I wonder if he liked those, too? (more…)

So most people in the USA know that Sunday May 9th is Mother’s Day, I hope… if not, now you do! I have once again been tinkering with the Cricut and SCAL to create a Card/Wordbook for my mom and MIL. This is as far as I have gotten; as you can see, the inside is blank. I have plans to add pictures and more “words” today or tomorrow. I hope you like it!

One of the downsides of moving out of the city limits and into the ‘burbs was the loss of being surrounded by restaurants. What was worse was moving from a place with my favorite restaurant within 15 minutes of where I lived – I now live at least 30 or 45 minutes from one of my most favorite restaurants. I have tried for years to recreate the dressing/sauce that keeps me going back time after time, and time after time I have failed… until now! This recipe (which is apparently highly guarded by Chuy’s staff) is the closest I have EVER come to reproducing the (almost) World Famous Creamy Jalapeño. If you pair this with Tia Rosa Megathin Tortilla Chips, you may just think you are at Chuy’s! (more…)

Dinner at the Chef’s Table: What a dining experience!

So T and I made sure that we signed up for the Chef’s Table  while on the cruise ship – and it was quite the experience! We had steak, veal, pork, lobster, crab, and so many other wonderful dishes, it would be hard to describe them all here! I have created a web page to give a better detail of such foods – it truly was a gluttons delight!
